Ranch Chicken Salad

 Ranch Chicken Salad

Serves 4-6

Ingredients:

  • 1 can drained chicken
  • 1/4 cup ranch dressing
  • 1/4 cup mayonnaise
  • 2 Tbsp minced onion
  • 2 Tbsp minced celery
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions:

For a different flavor (add 2 Tbsp pecans and or 2 Tbsp craisins)
1. Place chicken, ranch, mayo, minced onion, celery, salt and black pepper in bowl and mix.
2. Serve chicken salad on lettuce or make grilled cheese and chicken salad sandwich. (See below)

Grilled Chicken and Cheese Sandwich

Ingredients:

  • 2 slices sourdough bread
  • 1 T butter
  • 2-1/2 oz chicken salad
  • 1-1/2 oz cheddar cheese
  • 1/2 avocado (optional)
  • 2 tsp Buffalo sauce (optional)

Directions:

1. Butter one side of each bread and place butter side down in frying pan over medium heat.
2. Place cheese on each side of bread.
3. Heat chicken salad in microwave and place on one side of bread.
4. Top chicken salad with buffalo sauce and avocado (optional)
