Chicken Or Tuna Cakes

Chicken Or Tuna Cakes

Makes eight 1-oz cakes

Ingredients:

  • 2-1/2 oz chicken or tuna drained
  • 1/2 tsp granulated garlic
  • 4 Tbsp minced onions
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp lemon juice
  • 1 large egg beaten
  • 1/2 cup + 2 Tbsp oats
  • 4 Tbsp parmesan cheese
  • 1 tsp Dijon
  • 1/4 tsp red pepper flakes
  • 3 Tbsp Ranch
  • Lemon Wedge (optional)
  • 2 Tbsp canola oil

Instructions:

1. In medium bowl mix all ingredient (except lemon wedge and canola oil) together until combined.
2. Form into 1-oz patties.
3. Heat 2 Tbsp of canola oil in skillet over medium/high heat.
4. Add cakes into pan and brown each side.
5. Serve with a lemon wedge and extra ranch dressing (optional).
