
Food Box Recipe
Chicken And Rice Bowl
Serves 4-6
Ingredients:
- 1 cup rice
- 2 cups water
- 1 tsp chili powder
- 1 tsp salt
- 1 Tbsp canola oil
- 6 lime wedges (1 whole lime)
- 3 Tbsp chopped cilantro
- 1 can chicken (drained)
- 1/4 cup salsa
- 2 oz Ranch
- 2 oz shredded Mexican blend or shredded Monterey jack
- 1 can Pinto beans, drained
- 2 ½ tsp chili powder
- 1 tsp salt
- 2 tsp canola oil
- 1 can rotel tomatoes
- 1 can corn drained
- 2 oz diced white or red onion
- 1 whole avocado
Instructions:
1. Prepare the rice according to package directions, add one tsp chili powder, 1 tsp salt, and 1 Tbsp canola oil.
2. In a small bowl, mix chicken with 1/4 cup of salsa and heat in microwave.
3. In a second small bowl, mix pinto beans with 1-1/2 tsp chili powder, 1/2 tsp salt, and 1 tsp canola oil.
4. In a third small bowl, mix corn with 1 tsp chili powder, 1/2 tsp salt, juice from 1 lime wedge, 1 Tbsp cilantro, and 1 tsp canola oil.
5. Serve in 4 small bowls (or one big bowl) by portioning prepped rice, chicken, ranch, cheese blend, spiced pinto beans, spiced corn, rotel tomatoes, diced onions, avocado, lime wedges, and cilantro.
