Black Bean Burger

Black Bean Burger

Makes six 4-oz patties

Ingredients:

  • 1 can black beans, drained and rinsed
  • 1/2 can carrots, drained
  • 6 Tbsp minced onion
  • 3/4 tsp salt
  • 1/8 tsp black pepper
  • 1 large egg beaten
  • 1/2 tsp granulated garlic
  • 1 cup + 2 Tbsp oats
  • 1/2 cup grated parmesan
  • ½ tsp Dijon
  • 1/4 tsp red pepper flakes
  • 3 Tbsp ranch
  • 1 Tbsp chilis or jalapeños
  • 2 Tbsp canola oil

Instructions:

1. Place carrots in medium mixing bowl.
2. Mash carrots with fork.
3. Add onions, salt, black pepper, granulated garlic, and egg and mix.
4. Add oats, grated parmesan, Dijon, red pepper flakes, ranch, and jalapeno.
5. Mix until combined. Stir in black beans.
6. Make six 4-oz patties.
7. Heat skillet over medium heat. Add oil to coat bottom.
8. Place patty in oil and cook each side until golden brown. (Internal temp 165°F)
9. Serve on a toasted bun.
10. Serve with ranch dressing.
