Apple Sauce Donut-Hole Muffins
Makes 24 1-oz donut-hole muffins
Ingredients:
- 1/2 cup softened butter
- 1 cup sugar
- 1 large egg
- 1 tsp vanilla
- 8 oz apple sauce
- 3/4 tsp cinnamon
- 1/8 tsp salt
- 2 cups flour
- 1/2 tsp baking soda
- 6 oz butter, melted
- 1 cups sugar
- 1 tsp cinnamon
Instructions:
1. Preheat oven to 350°F.
2. Place 1/2 cup softened butter and 1 cup sugar in mixing bowl of electric mixer and mix on medium until fluffy.
3. Beat in egg, vanilla, and applesauce until well combined.
4. Stir in flour, baking soda, 3/4 tsp cinnamon, and salt.
5. Spray mini muffin pan with Pam and fill each 3/4 the way full with batter.
6. Bake 15-20 minutes or until a toothpick comes out clean.
7. Mix 1 tsp cinnamon and 1 tsp sugar in bowl.
8. Brush or dunk each donut hole muffin in melted butter.
9. Roll in cinnamon and sugar.
10. Place on cooling rack.
